Concept
From Karatsu to Hakata.
YONEHACHI is an eight-seat sushi restaurant tucked away in Gokushomachi, in the old town of Hakata.
Carrying on a name first used in 1868, and built on the supervision of Yuji Matsuo of two-Michelin-star Sushi-dokoro Tsukuta in Karatsu, we serve Japanese cuisine and sushi built around wild-caught fish from Karatsu.

Sourcing
Buying face to face with producers and expert buyers.
What YONEHACHI values above all is buying where the background of every ingredient is visible.
For wild-caught fish we go to Karatsu ourselves, and use mainly fish that has passed through the eye and the hands of Takuro Oyama of Oyama Sengyo-ten.
The wild bluefin tuna is raw fish selected by Yamayuki at Toyosu.
We also bring in the best of each season from expert buyers we trust across Japan, among them Konishi Sengyo-ten in Hakodate and Ishiyo in Kanazawa.
Not the place of origin or the name alone, but the state of each ingredient on the day, and choosing what we judge best.
That is where an evening at YONEHACHI begins.




The Chefs

The cooking is in the hands of two chefs, each of whom has trained along their own path, one in Japanese cuisine and one in sushi.
Drawing on experience and skill built at renowned restaurants, Michelin-starred establishments among them, they shape a single omakase course that runs from seasonal small plates through to nigiri.
Underpinning it all is the supervision of Yuji Matsuo of two-Michelin-star Sushi-dokoro Tsukuta in Karatsu.

Built around wild-caught fish from Karatsu, the course uses seasonal ingredients chosen from across Japan, wild bluefin tuna from Toyosu among them.
Bringing together skills honed in Japanese cuisine and in sushi, we shape a single omakase course that runs from seasonal small plates through to nigiri.
There is no single start time.
Please reserve whichever time suits you.

The Counter
Eight seats, and only eight.
The counter, a single slab of ginkgo, seats only eight.
With the chefs at work in front of you, you can enjoy the whole time it takes for an ingredient to become a dish or a piece of nigiri.

Sake & Wine
A glass for each dish, each piece.
Our sake, champagne and wine are chosen by our sommelier and sake sommelier with each dish in mind.
We also offer pairings matched to the season's dishes and sushi.
For sake, labels from breweries across Japan that sit close to the food.
For wine, champagne first among them, bottles that draw out the finish of each dish and each piece of sushi.
Our beer is Pilsner Urquell, born in Pilsen in the Czech Republic.
Each glass is poured with care, using the technique of a tapster certified by the brewery.

Before You Visit
Dress code
Smart casual. We ask you to refrain from T-shirts, shorts and sandals.
Allergies and dislikes
We accommodate them wherever we can. Please tell us when you book. If you cannot eat raw fish, or if there are many ingredients you cannot eat, we may be unable to accommodate you.
Children
Children who can enjoy a meal while seated are welcome.
Arrival time
Please arrive five minutes before your reservation so that the meal can begin on time.

The restaurant is entirely non-smoking.
Fragrance and photography
